Chukar Crostini with Goat Cheese & Hot Honey

Ingredients

For the Chukar

  • 2 boneless chukar breasts (about 4 breast halves)

  • 1 tablespoon olive oil

  • 1 tablespoon avocado oil

  • ½ teaspoon garlic powder

  • 1 tablespoon butter

For the Goat Cheese Spread

  • 8 ounces plain goat cheese, softened

  • 4 ounces honey goat cheese

  • 2 ounces herb and garlic goat cheese

  • 3 tablespoons whipped cream cheese

  • 2 tablespoons heavy cream

  • 1 teaspoon fresh thyme leaves

  • Freshly cracked black pepper

Crostini

  • 1 French baguette, sliced into ½-inch slices

  • Olive oil

  • 1 garlic clove, peeled

Toppings

  • Hot honey

  • Fresh thyme

Directions

1. Make the Crostini

Preheat the oven to 400°F.

Brush both sides of each baguette slice lightly with olive oil and arrange them on a baking sheet. Bake for 8 to 10 minutes, flipping halfway through, until lightly golden.

While still warm, rub each slice with the peeled garlic clove for a subtle garlic flavor.

2. Cook the Chukar
